    INTRODUCTION

     

    Chitin is a widely prevalent biopolymer that is present in the cell walls of fungus, algae, insect cuticles, and the exoskeletons of crustaceans. Less frequently seen in nature, chitosan is found in several fungi (Mucoraceae). Historically, the majority of commercially available chitosan samples were made by chemically deacetylating chitin derived from crustacean sources. Demand from vegans has recently increased market interest in chitosan derived from fungi.

     

    Additionally, these samples have lower viscosities that are well regulated and have a very high deacetylation level. The rising interest in producing protein from these sources has led to a rise in interest in production from insect cuticles.     Chitosan oligomers are soluble at a variety of pH levels, including basic and acidic ones. Contrarily, even at high deacetylation levels, chitosan samples with greater Mw are only soluble in acidic aqueous conditions. Chitosan’s usage in several applications under neutral physiological circumstances has been hampered by its insolubility at neutral and basic pH.

     

    This is the rationale behind the extensive development of chitosan derivatives with improved solubility. By deacetylating chitin, chitosan is created; during this process, certain N-acetylglucosamine moieties are changed into glucosamine units. Since chitosan’s pKa value is close to 6.5, its solubility in acidic aqueous conditions can be attributed to the structure’s abundance of protonated -NH2 groups.
