The starch is broken down by the mushroom cells, which create hundreds of strands of cells that can swell to be an inch thick. The form is now ready to be used as leather after being dried to prevent mould. Mushroom cultivation and sales are a lucrative industry, so it's critical to ensure that they are well sealed to ward off germs and dryness. The mushroom leather is more malleable and suitable for a range of uses if it is kept damp.
